Aromas of pink grapefruit, rose petals, and crushed summer berries. A racy and textural rosé with hand-harvested Grenache shining through as the dominant grape.
Grenache and Mourvèdre are hand-picked in the cool of the morning, allowing for the lightest possible juice extraction. The remaining machine-harvested parcels have a higher level of extraction, adding fruitiness and power to the blend. Grapes are harvested at varying ripeness levels for a balance of acid, minerality, and freshness. Very gentle pressing at low temperatures is followed by cool fermentation as separate batches, with a different yeast strains creating layers of complexity. After four months aging on light lees, the wine is bottled while still young and fresh. Grenache / Mourvèdre / Shiraz / plus a touch of Merlot and Semillon
