Soil: The mythical terroir of Chateau neuf du-Pape made up of these famous rolled pebbles made us want to express our passion for Grenache. Located on a small terrace on the northeast side of the appellation, the rolled pebble floors find their originality in a large proportion of saffron where the Grenache will express even more fruit. This wine is natural and unfiltered which is why a depot may form; it is the guarantee of our craftsman and respectful work.
Varieties : 80% Grenache, 10% Syrah, 10% Mourvèdre
Vinification : Vinified at the Estate, our wines are produced from grapes harvested by hand, mostly destemmed and vat-free without SO2. Our fairly long vats (5 to 8 weeks) are brought to a temperature of 22/30 ° C with gentle extractions and work regular lees. The priority objective here every day is to maintain a fresh ridge from start to finish without losing the finesse of the tannins. After a slow pneumatic pressing, gout wines and presses are assembled according to the vintages and the 12-month aging combines both a small proportion of wood (10%) and a traditional aging in concrete vats (90%).
Tasting notes : With a deep purple red, this wine offers a fused aromatic family around small ripe but crisp red and black fruits, caramel liquorice and lightly waxed Mediterranean spices. The attack on the palate is smooth and racy. The freshness of structure on a volume of small imperceptible and uphols- tered tannins places the juice among the expectations that we want on a grand cru. The persistent aromatic notes settle in an environment made of undergrowth but also of complex mineral basement. The precision of the attack / mid / final balances makes the perception of alcohol almost imper- ceptible. The finish shows a nice sweetness always in balance with the freshness and the fine grain of the raw material.
