Soil: Located in Gigondas "Jugunda", we have two different and complementary terroirs composed of Grenache and Syrah, with the sole objective of offering a wine revealing both the strength of this terroir and the elegance of Grenache at altitude. Our wines therefore come from the blend of these two distinct terroirs: - terraces of limestone stones on red clays located to the west of the appellation, where old Grenache over 60 years old are grown in goblets and Syrah in cordon de Royat. - in the magnificent setting of the Dentelles de Montmirail located 500 meters above sea level, a terroir of Jurassic limestones with outcrops of marl carry Grenache conduits in cordon de Royat. Varieties : 80% Grenache, 20% Syrah
Vinification : Vinified at the estate, our wines are produced from grapes harvested by hand, partially destemmed and vat-free without SO2. Our fairly long vatting (5 to 7 weeks) is carried out at a temperature of 22 to 28 ° C with gentle extractions and regular work of the lees. After a very slow pneumatic pressing, drop wines and press wines are assembled according to the vintages with a traditional aging mainly in concrete vats of very fine grain uncoated as well as some old barrels.
